In the South of Italy, the cultivation of the bergamot orange is a regional specialty. The fruit is less sour than lemon and more bitter than grapefruit, and the aromatic oils are extracted from the skin of the citrus. The essential oil is blended with orthodox Ceylon tea and the leaves are processed the traditional way of rolling and pressing, which produces a higher quality leaf.
